Spicy Prawn Noodles

For my second instalment in the Jamie Oliver '7 Ways' series, I went for these spicy prawn noodles. It's quick, simple and healthy. I'll certainly be making these again soon!


Ingredients:


- 1 pak choi

- 1 clove of garlic (I always use 3 or 4)

- 2cm piece of ginger

- 75g of egg noodles


- 80g raw prawns

- 1 heaped teaspoon of sesame seeds

- 1 heaped teaspoon of chilli jam (I actually used one fresh chilli and it worked perfectly)

- 2 teaspoons of soy sauce


Method:


Firstly stick your water on to boil. Then chop the leaves off the pak choi, put them to the side and cut the base into slices (you may need to rinse as sometimes they have soil in them). Add the slices to a non-stick dry pan on a medium to high heat and cook until nicely charred. Remove them and put them to the side.


Then finely chop your garlic and chilli (if you prefer to use fresh chilli like me) and grate your ginger. Add your noodles to the boiling water.


Add olive oil to your pan and throw in your garlic, chilli and ginger. Cook down for a couple of minutes and then add your prawns. Cook until pink through and add your sesame seeds with the charred pak choi. Once your noodles are ready, throw in the pak choi leaves for the last ten seconds and then bring them straight from the water to the pan. Give it a good a mix and add your soy sauce.


I then garnished with some more sesame seeds and red chilli flakes.


This was really delicious, super time efficient and packs a good punch: 8/10.
