Golden Crispy Chicken

I've now made over 40 videos for my TikTok page since starting in November. It's been a thoroughly enjoyable process, however I have to admit inspiration doesn't flow day-to-day. Therefore I went looking for help and my good friend (I don't think he's aware of the friendship just yet) Jamie Oliver provided.


I recently got his book '7 Ways' which is brilliant and this crispy golden chicken was hands down one of the best things I've tasted. I've decided to make a little series following his book, putting the recipes on camera (TikTok: thehealchef) and reviewing them here.


Ingredients:


- 2 x 150g chicken breasts (or just 1 if you're not that hungry)

- 1 lemon

- 2 tablespoons of plain flour

- 2 rashers of streaky bacon


- 30g bread crumbs

- 1/2 ripe avocado

- 1 tablespoon of natural yoghurt

- Hot chilli sauce


Method:


On a board, cover your chicken breast with grease proof paper and beat them with a rolling pin (or whatever is closest to hand) until they are about a cm think. Then score, squeeze over half a lemon juice and season with salt and pepper. Throw it in the flour and cover evenly. Put to the side and finely chop your bacon.


Get your pan on a medium to high heat with olive oil, add your chicken and bacon and leave for 3 minutes. Whilst it's cooking, open up your avocado and scrape into a bowl. Mush it up, add your yoghurt with a squeeze of lemon and season to taste.


Then flip the chicken and cook for another 3 minutes (or until cooked through). Remove it, add your bread crumbs to the bacon and cook until golden brown, which should take less than a minute.


Spread your avocado yoghurt onto a plate, place chicken on next and then top with your bacon and bread crumbs. I used to sriracha for the hot sauce which complemented it perfectly,


This was so quick and simple, but absolutely delicious. A solid 9.5/10. Many thanks Jamie!
