Valentine's Day Roast Garlic & Seared Chicken Recipe
- 2 chicken breasts
- 2 bulbs of garlic
- 300g of mushrooms
- 250ml of chicken stock
- 300ml of double/heavy cream
- Half a cup of white wine
- Chopped parsley to garnish (optional)
Pre-heat your oven to 180c/350f. Slice the top off two bulbs of garlic and cover well with olive oil, season with salt and pepper and a pinch of thyme. Cover and place in the oven for 45 minutes.
Whilst your garlic is roasting, thinly slice your mushrooms and season your chicken breast with salt and pepper. Once your garlic has finished roasting, remove from the oven and squeeze into a bowl. Mix into a paste.
Get your pan on a medium-high heat and sear your chicken breast for five minutes, flip and sear the other side. Then remove from the pan and place to the side. Deglaze your pan with white wine, add a knob of butter and your garlic paste and stir well. Then go in with your mushrooms and cook down for 2-3 minutes. Pour in your chicken stock and double cream and re-add the chicken to the sauce. Cover and simmer for 15 minutes.
Season for taste and serve with rice/pasta/mashed potatoes or whatever your stomach desires...
